- Feta, or other cheese of your liking
- Fresh Squeezed-Lemon Juice
- Olive Oil
- Salt and Pepper to Taste
- Mix 1 to 1 ratio of lemon juice and olive oil and set aside for dressing.
- Dice tomatoes and cucumbers. Chiffinade basil. Toss together with croutons, top with feta/cheese and drizzle with dressing. Salt and pepper to taste.
