Roasted Acorn Squash


  • Acorn Squash
  • Olive Oil
  • Salt
  • Pepper


  1. Preheat oven to 375.
  2. Poke acorn squash with fork and microwave for 6-8 minutes, allowing the squash to become tender.
  3. Cut squash in half and de-seed. Slice halves into 1/4 in pieces. Toss in olive oil and salt and pepper to coat.
  4. Spread on a single layer of foil-lined sheet pan. Drizzle with a bit more olive oil. Roast 20-30 minutes until desired cook.
